Printing companies today use a process called offset printing. The first part of the process involves transferring an image to a metal plate. The plate is wet with water and then ink. Because water and ink cannot mix, they separate onto separate areas of the plate - the ink to the image and the water to the rest of the plate. The reason for the name, offset, is that the plate is not immediately pressed onto the printing service. First, the image for the plate is transferred to a rubber mat (blanket) and then finally printed onto the paper. The rubber adheres better to paper than the plate, providing a sharper image.
